Introduction

Ingredients

    2 12 oz cans yellow corn
    2 14.5 oz cans stewed tomatoes
    2 14.5 oz cans diced tomatoes (fire roasted even better!)
    2 14.5 oz cans black beans
    2 14.5 oz cans red kidney beans
    1 14.5 oz cannelini beans (white kidney beans)
    2 medium onions, chopped
    4 zucchini, chopped
    3 yellow squash, chopped
    6 bell peppers (green, red, yellow are best, green is more cost effective)
    4 lbs ground turkey OR 4 lbs 93/7 ground beef (turkey is healthier, beef more cost effective)
    2 packets low sodium chili seasoning

Directions

VERY easy...split ingredients into two huge pots, bring to boil, reduce to simmer. I generally start with the beef, then chop the onions and start adding veggies to the pot after I chop them. By the time I'm finished with the veggies, the beef is browned, and I add my beans, corn, tomatoes and spices. Top with two tbsp cheese and light sour cream if desired.
