Introduction

Soba noodles tossed with a spicy sesame peanut sauce. Served chilled or at room temperature. VERY decadent, so a once in a while treat. Soba noodles tossed with a spicy sesame peanut sauce. Served chilled or at room temperature. VERY decadent, so a once in a while treat.

Ingredients

    Soba Noodles
    Rice Wine Vinegar
    Sesame Oil
    Peanut Butter
    Soy Sauce
    Hot Chili Oil
    Sugar
    Crushed Red Pepper
    Ginger Root
    Garlic Powder
    Green Onions
    Peanuts

Directions

Cook soba noodles according to package directions. Drain and rinse for a few seconds with cool water to stop the cooking process.

While the noodles are cooking, dice a 1" piece of ginger root and saute for 2 minutes in a teaspoon of sesame oil. Transfer to a large bowl. Whisk in all of the rest of the ingredients except the noodles, green onions, and peanuts.

Add the noodles to the sauce and toss to coat. Garnish with green onions and chopped peanuts.

Serve at room temperature or slightly chilled.
