Introduction

I made this up on the fly just to use up some things I had lying around, and it turned out really tasty!! (I really love cooked carrots!) I made this up on the fly just to use up some things I had lying around, and it turned out really tasty!! (I really love cooked carrots!)

Ingredients

    1 boneless, skinless chicken breast, cut in half
    2 glasses (about 7 ounces) of white wine (I used Moscato, a sweet wine)
    1 pat of butter, melted
    30 baby carrots
    1/2 cup frozen peas
    Garlic salt to taste


Directions

Place chicken breast in a small, deep baking dish. Place vegetables on top of and around chicken. Mix together melted butter and wine and pour over chicken and vegetables. The liquid should cover most of the chicken & veggies, but some will still be poking out. Sprinkle garlic salt on top. Bake at 350 for about 60 minutes. I like my carrots pretty soft, so I might've cooked it for longer than other people would like. Every 20 minutes or so, give the vegetables a stir so the ones on top don't get too dry. I served this with a little brown rice. It was very filling and really yummy!! =)
