This salad is easy to make and you can customize the ingredients to fit what you like. This salad is perfect with gazpacho dressing but you can use what you like. Ingredients

    Cucumber, 1 cup chopped and peeled
    Vine Ripened Tomatoes, 1cup chopped
    Sweet Corn, Fresh, 1 ear, medium
    Onions, raw, 1 cup chopped
    Avocado, California (Haas), .5 fruit, sliced
    Bacon, 2 medium slices, cooked and chopped
    Cilantro, Fresh, .25 cup, chopped

Directions

Brush corn with extra virgin olive oil, wrap with foil and cook in a 375 degree oven for 20 minutes
When corn is finished cut kernels off the cob
Fully cook bacon and chop
Mix all ingredients except avocado
Slice avocado and place on top
Serve with your favorite dressing
