Introduction

This is a great way to get in your leafy green vegetables, even if you hate them. All of my family eats this dish with the fine cheese topping. Best thing; it can even be eaten cold.
This is a non-diet version - but you can elliminate the olive oil and the bacon to cut on calories. Serve with toast.

Ingredients



    Kale, cooked, boiled, drained, with salt, 6 cup, chopped (alternatively, chop up a bigish head of kale and boil in salty water for about 1-2 mintues).
    Onions, raw, 1 cup, chopped
    Olive Oil, 2 1tsp
    Cheddar Cheese, 1 cup, shredded (alt. any other hard cheese that melts well)
    Sour Cream, reduced fat, 1 cup
    Egg, fresh, 2 medium
    Louis Rich Turkey Bacon (1 slice), 8 serving

Directions

Chop and boil in salted water a bigger head of kale; drain; pour into a baking tin.

Heat up the oil in a skillet and toss the onions in it for a few mintues; add to the kale, mix.

Mix: shredded cheese, eggs and sourcream; pour mixture over the kale and onions. Distribute to an even layer over the vegetables. Place strips of bacon on top of it.

Bake for about 30 minutes (until a crust forms with brown spots) in the oven at about 200C or 400F.

Serve warm or cold; serve with toast.
Makes about 6 servings.
