Introduction
Loving meat..I wanted to make something that I could eatand not feel like I do when I have to have a burger from Mcdonalds(however yummy - not so good for me) At the same time I wanted to make sure that my picky eater would eat more veggies - (I served with Broccoli on the side-he did not eat it) Its great cold - crumbled up on multi grain tortilla - less than 200 calories Loving meat..I wanted to make something that I could eat

Ingredients

2 lbs 93/7 ground hamburger meat 170 calories 8g fat 23 prot carbs 0
½ cup or 1 med onion chopped
3 cloves grated garlic
1 large grated carrot
1 cup chopped spinach
¼ tablespoon paprika
¼ crushed red pepper
¼ dry rosemary
Pinch of ground clove
½ tablespoon black pepper
1 cup plain bread crumbs
1 egg
1 queso Fresco part skim 4 oz cheese chopped
Directions
Heat oven to 350
Mix through
Grease with cooking spray a 12 muffin - pan.
Place two tablespoons of the meat mixture in each muffin cup.
Form the meat to the cup and press all meat down so there is no spills as meat cooks
Top with 1 teaspoon of mild salsa - place in a 350 oven for 20 - 30 minutes.
Repeat until you have used all meat - makes 12 - 18 mini’s
Serve with one cup cooked broccoli and one cup diced apple for an est 85 additional calories
