Ingredients

    1 tsp Chinese white cooking wine (or white wine)
    1 tsp sugar
    1-1/2 tbsp soy sauce
    1 tbsp olive oil
    2 scallions, cut into 2-inch julienne
    3 tbsp slivered fresh ginger
    1 lb medium shrimp in the shell, heads left on

Directions

In a small bowl, mix the wine, sugar, and soy sauce. Set aside until ready to cook. Heat a wok over high heat, then add the oil. When the oil is hot, add the scallions and ginger, and toss for 10 seconds.

Add the shrimp and toss for 2 minutes; the shrimp will turn red. Add the soy sauce mixture and toss for another 10 seconds, then remove from the heat onto a serving plate. Serve immediately.
