Ingredients

2 c. salsa
14.5 oz. tomatoes, diced
12 tortillas (La Favorita multi-grain)
1 lg. onion (3/4 c.), chopped
2 large peppers (green, red, yellow, etc.), chopped
4 oz. can diced green chiles
1 c. shredded mexican cheese - 2% milk, 4 cheese blend
Directions
Preheat oven to 350 degrees.
Heat salsa and chopped tomatoes on stove or in microwave. Set aside.
Set aside aside a little bit of the onions, peppers, and for garnish. Spread each tortilla with beans (2T) and add onions, peppers, chiles and a little bit of cheese. Roll tortillas and place in 9x13 baking dish that has been sprayed with Pam.
Pour sauce mixture over the rolled tortillas. Sprinkle with remaining onions, peppers, and cheese.
Bake at 350 degrees for approximately 25 minutes (until bubbling).
Can serve with fresh tomatoes and fat-free sour cream, if desired.
