Introduction
I had heard of this cake before and went searching for it. It was really great and a crowd pleaser! I had heard of this cake before and went searching for it. It was really great and a crowd pleaser!Number of Servings: 16
Ingredients
-
-1 package reduced sugar yellow cake mix like Pillsbury
-4 large egg whites
-1 can (11 oz) mandarine orange segments in light syrup, undrained (I used Shop n Save)
-1/2 C unsweetened applesauce
-1 can (20 oz) unsweetened crushed pineapple like Dole, undrained
-1 small box vanilla pudding pie mix about 4.5-5 oz (I used an Aldi brand)
-8 oz whipped topping
Directions
--In a medium bowl with a mixer, mix on low speed the oranges, egg whites, applesauce and cake mix for about 2 minutes. Pour into either two 8" or 9" round floured cake dishes or two 8" x 8" floured square dishes. Bake at 350 degrees for 25-30 minutes or until toothpick in center comes out clean. Set dishes on a wire rack and cool completely before removing!!
--In another medium bowl, mix with the mixer the pineapple and pudding powder until well blended. Let sit in the fridge until the cake is done and cooled. When cooled, fold in the cool whip gently and spread it on the first layer of cake then put the second layer on top and finish layering it. Put in the fridge and let sit for an hour before serving.
--Makes 16 servings.
