Introduction
A recipe I tinkered with and edited to my own tastes. It's full of vitamins and protien, good for any vegetiarian. You can serve it with rice, sour cream, or plain yogurt. Ingredients

1 onion (8 oz.), peeled and chopped
2 teaspoons minced garlic
1 tablespoon olive oil
1 cups dried lentils(must rinse and boil for ten minutes)
1 cup chickpeas
2 5'' long sweet potatoes peeled and diced into small cubes(1/4 in.)
2 tablespoons curry powder
1 tablespoon ground cumin
4 cups vegetable broth(For non-vegetarians, you can substitute with chicken broth if preferred)
Salt and pepper to taste
Directions
1. In a large pan or wok, over medium heat, stir chopped onion and garlic in oil often until onion is limp, about 5 minutes. Stir frequently.
2. Mix lentils and chickpeas. Let them cook for a minute or two. Then, add sweet potatoes, curry powder, and ground cumin. Dump vegetable broth over all of it.
3. Reduce heat, cover, and simmer until lentils and sweet potatoes are tender, in about 25 to 30 minutes. Add salt and pepper to taste. Serve with rice, sour cream or plain yogurt.

Sounds amazing!! What kind of lentils do you use? And, what size is the can? - 2/18/10

(sorry didn't spot the comment sooner!) I actually switched over to dried lentils(the normal Goya once I guess, lol) because there much much cheaper. get about a 1 - 1/2 cup of dried, rinse them and boil for a good ten minutes and then add them into the mix!
