Ingredients

    Italian Salsa:
    -2 cups chopped/diced tomatoes
    -1/2 cup chopped fresh basil (can sub 3 tbsp of dried)
    -1 tbs lemon juice
    -1 tbs minced garlic (can sub garlic powder)
    -1/4 cup diced onion (can sub 1 tbs onion powder)
    -1/2 tsp red wine vinegar
    -1/4 tsp black pepper

    Chicken marinade
    -1 tbsp chopped fresh oregano (can sub for 1/2 tbsp dried)
    -1 tsp lemon juice
    -2 tbsp red wine vinegar
    -2 tsp olive oil
    -1 tbsp Dijonnaise mustard
    -1 tsp minced garlic (can sub dried)
    -dash of rosemary
    -dash of thyme
    -dash of parsley
    -dash of garlic powder
    -1/4 tsp black pepper

    16 ounces of chicken

Directions

Italian Salsa
Combine all ingredients in bowl. If time permits chill and marinade in fridge for at least an hour.

Chicken
Combine all of marinade ingredients in large zip-lock baggie and add chicken and seal. Make sure all of chicken is coated. If time permits place chicken in fridge to marinate for at least an hour. Grill chicken until cooked to liking (can be done in a pan or on a george foreman grill)

Top chicken with salsa and enjoy.
