Ingredients

    About 8 oz of Salmon (apprx 3 fillets)
    2 Cups Sweet Corn
    1/4 cup Onion (pref red)
    1/2 of a Red Bell Pepper cut into strips
    1 Medium Tomato, Halved and sliced
    1/4 Cup Alfalfa sprouts
    1 Tbsp dried parsley
    1 Tsp Dill Weed
    1 Tbsp or 1 clove garlic
    3 Tbsp Olive Oil
    Salt/ Pepper to taste

Directions

Mix corn, tomato, pepper, alfalfa, onion, parsley, dill weed, garlic, and 2 Tbsp olive oil in a bowl. Set aside.

Heat 1 tbsp olive oil in a skillet. Place salmon in skillet and cook for 2-4 minutes on each side, sprinkling with salt/pepper. Plate salmon and stir fry relish for about 1 minute. Put relish on top of salmon. Enjoy.
