Introduction

I have tried many different types of gazpacho recipes, however this one I made according to my taste. This is fabulous in summer! Either as a light lunch/ dinner or a starter. Ingredients

    4 medium ripe tomatoes
    1/5 medium to small onion (white or red)
    1 garlic clove
    1/3 cucumber with peel
    1/2 bell pepper (green, red, or yellow)
    1 tbsp olive oil
    2 tbsp soy sauce
    1/2 tsp basil (dry)
    1/2 tsp parsley (dry) use fresh for garnish
    1 tsp black pepper
    1 tbsp lemon juice
    50 ml red wine (dry)

Directions

Makes 2 large bowls.

Chop everything and mix together with spices and liquids. Puree until soup consistency is acquired. Dish into soup bowls, add an ice cube to keep cool - garnish with fresh parsley. Serve with 1 - 2 very thin toasted slices of brown or wholewheat bread, or enjoy just as is.
