Introduction

Ingredients

Neufchatel Cheese, 8 oz
Velveeta, 6 oz
Cheddar Cheese, 1 cup, shredded
apricot jelly, 4 tbsp
Salsa, 1 cup
Enchilada Sauce - Red, 1 Can
Directions
1. In medium glass or microwave safe bowl, melt neufchatel, velveeta and jelly for 1 - 2 minutes in microwave, and stir until smooth.
2. Add cheddar cheese and stir until smooth. If cheese does not melt, continue microwaving 30 seconds at a time then stirring until it does.
3. Stir in salsa and enchilada sauce until smooth. It will look weird and lumpy for a bit, but just keep stirring.
4. Serve with fresh veggies or tortilla chips. Awesome dip for quesadillas.
Can drop, add or substitute ingredients easily . Several options for additions or substitutions include: 1 can Rotel, 1 can green enchilada sauce,1 can regular or nacho cheese soup, 1 can chopped green chilis, several chopped jalepenos, chopped fresh or dried peaches, apricots or mangoes, peach or mango jelly, shredded colby, jack or other hard cheeses.
