Ingredients

    2 qts. water
    3/4 cup of dried lentils
    1/2 cup of uncooked brown rice
    1 envelope of onion soup mix
    1 can (14 ounces) diced and undrained tomatoes
    1 medium carrot
    1/2 cup of diced celery
    1 tablespoon of parsley
    4 chicken bouillon cubes
    1/2 teaspoon of basil
    1/2 teaspoon of oregano
    1/2 teaspoon of salt
    1/2 teaspoon of pepper
    1/4 teaspoon of thyme
    1 tablespoon of cider vinegar

Directions

Bring all the ingredients (except the vinegar) to a boil. Cover and simmer for 45 to 60 minutes. Stir in the vinegar.
