Ingredients

6 cabbage leaves
1 cup brown rice
1 cup mushrooms (portabello, or whatever you have)
1 egg
1 Tbsp parmesan cheese
1 slice wheat bread
1 can tomato soup (condensed)
water
1 small onion
Directions
Chop onions and fry. Preheat oven to 375 degrees.
Pulse mushrooms in a food processor until a rough, moist pulp is formed. Place mushroom mixture in a mixing bowl. Add brown rice, egg and parmesan cheese to the mushrooms and mix well. Put bread in food processor and mix until fine bread crumbs are formed. Add bread crumbs slowly, mixing as you go, and checking the consistency.
Bring a pot of water to boil, and boil each leaf of cabbage, one at a time, for one minute to wilt.
Take a spoonful of the mushroom mixture and place it in the center of the cabbage leaf. Roll up and place in a baking dish. Repeat with the other cabbage leaves.
Mix one can of tomato soup and one can of water, then add fried onions. Pour over the cabbage rolls, and bake for about one hour. Check to make sure the cabbage doesn't burn.
