Introduction

Number of Servings: 34

Ingredients

    2 Cups rolled oats
    2 cups Almond Milk (any other type of milk can be substituted)
    2 cups whole wheat flour
    1/2 cup ground flax seed
    1/2 cup raw sugar
    1/2 cup brown sugar
    4 egg whites
    1 cup mashed banana
    1 cup fresh or frozen blueberries
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    1/2 tsp ginger

    Soak oats in milk for approximatly 1 hour
    preheat oven to 400 degrees
    Combine oat mixture, applesauce, egg whites an banana. Mix until combined. Fold in blueberries
    In a separate bowl combine dry ingredients and whisk together. Add wet ingredients to dry ingredients and mix until just combned. Do not overmix.
    If not using paper muffin cups spray muffin pans with nonstck spray before filing.
    Use approximately 1/4 cup batter per muffin
    Bake 15 - 20 minutes or until done.
