Ingredients

    1 can of black beans, rinsed, or 2 c. fresh-cooked
    2 small or one large red onion, diced
    1 large green or yellow pepper, diced
    1 small summer squash, diced
    1 large cucumber, peeled and diced
    3 medium tomatoes, diced
    2 tbsp. olive oil
    1 tbsp. lemon juice
    4 tbsp Lawry's Caribbean Jerk marinade
    1/4 c. fresh cilantro, coarsely chopped

Directions

Rinse beans well, and drain. Dice vegetables, add cilantro, oil, lemon juice and marinade, and toss. Chill for 1 hour or more. Makes approximately 12 1-c servings, dependent on the sizes of the veggies.
