Ingredients

    1 lb. boneless, skinless chicken breasts, cubed
    10 oz. crimini mushrooms, sliced
    8 oz. frozen mixed vegetables
    3 Tbsp. chives
    garlic, sage, thyme, salt and pepper to taste
    10 Tbs. reduced fat sour cream
    1 can petite diced tomatoes

Directions

Combine chicken, mushrooms, tomatoes and vegetables in baking dish. Add spices and chives. Bake for 20 minutes at 350 degrees, uncovered. Add cheese. Bake covered for 30 minutes. Add sour cream and mix. Bake an additional 20 minutes, uncovered. Makes 4 - 6 servings. Nutritional information is figured on four servings.
