Ingredients

    2 Servings

    1 can mixed beans or chickpeas, drained and rinsed
    1/2 cucumber chopped
    1 tomato chopped
    1 cup cooked quinoa (or pasta)
    2 tbsp chopped parsley
    1 tbsp red wine vinegar
    2 tsp olive oil
    1/4 tsp Dijon mustard.
    Pinch of salt, black pepper, thyme, oregano.

Directions

1. Place chickpeas (or beans) in large bowl, and add cucumber, tomato, quinoa (or other pasta) and parsley.
2. In small bowl, whisk together vinegar, oil, mustard, and any other spices you wish. Pour over salad and toss to coat.
