1 1/2 Onions, roughly diced
3 Large Carrots, chopped in coins
4 Stalks Celery, chopped
1 Cup Brown Lentils
1 Cup Brown Rice
1 Can Stewed Tomatoes
1 Tsp Basil
1 Tsp Thyme
1 Tsp Coriander
1 Tsp Salt
8 Cups Water
Directions
Throw everything in a pot, turn heat on high and bring to boil. Once boiling, turn down to low and let simmer until lentils and rice are soft . . . 45 min- 1 hr.
