Wonderful served warm or cold. Great for potluck dinners if you want something simple and delicious to bring. Can be used as a side item or dessert.

Ingredients

    3 14 oz cans Pineapple Tidbits (or 2 20 oz cans) DRAINED
    1 cup Sugar
    2 cups grated sharp cheddar cheese
    6 TBSP Flour
    6 TBSP Pineapple juice (saved from the tidbits)
    1/2 cup butter or margarine
    1 sleeve Ritz Crackers - crushed/crumbled in the sleeve

Directions

Drain the pineapple tidbits and save some of the juice. Combine the sugar, 6 TBSP Flour and 6 TBSP pineapple juice and mix well. Add in the pineapple tidbits and stir. Add in the 2 cups of grated cheddar cheese and mix well. Spray a 1-1/2 or 2 QT Casserole dish with non-stick cooking spray and add the pineapple mixture. Crumble up the ritz crackers in the sleeve and melt the 1/2 cup of butter. Combine the ritz crackers and butter until well mixed. Spread the buttery crumbs evenly on top of the pineapple mixture and bake in a 350 degree oven for 30 to 45 minutes. The top will be golden brown and the pineapple cheese mixture bubbly.
