    zucchini, carrot, tomato, lean ground beef/turkey, lasagna noodles, pasta, ricotta, cottage cheese, egg, garlic, thyme


makes 6 large pieces

Cook noodles al dente

Brown the meat and add half the tomato sauce, the tomatoes cut in half lengthwise

Mix ricotta, cottage cheese, eggs and half the mozzarella in a bowl

cut the zucchini in half lengthwise and then horizontally in slices. shred the carrotts. combine in a separate bowl with minced garlic, salt, pepper, and 1 T thyme.

Layer in this order in a 9x9 square pan:

Meat sauce
1/2 cheese mix
2 Tbsp tomato sauce
1 cup cheese mix
2/3 vegetable mix
1 cup cheese mix
2 Tbsp tomato sauce
remaining vegetable mix
remaining mozzarella cheese

sprinkle with thyme.

Bake 30 minutes covered in 450 degree oven. remove covering and cook another 15 minutes. Remove from oven and let cool 15-20 minutes before serving.
