Ingredients

    1 1/4 cups Quaker Oat Bran cereal uncooked
    1 c whole wheat flour
    2 tsp ground cinnamon
    1 tsp baking powder
    3/4 tsp baking soda
    1/2 tsp salt
    3/4 c unsweetened applesauce
    1/2 c honey
    1/4 c Crisco extra virgin olive oil
    2 eggs
    1 tsp vanilla extract
    1/4 c chopped walnuts
    1/2 c blueberries

Directions

Preheat oven to 375. Coat 12 medium-size cups with vegetable oil or line with paper baking cups. In medium bowl combineOat Bran cereal, flour, cinnamon, baking powder, soda and salt. Add applesauce, honey oil, eggs and vanilla. Stir well; add nuts and blueberries. Fill prepared muffin cups almost full. Bake 15-20 minutes or until golden brown. Serve warm.
