Ingredients

    2 cups cubed Papaya
    1can(15 z) rinsed and drained black beans
    1medium avacado, peeled and cubed
    1 cup frozen corn,thawed
    1/2 cup golden raisins
    2 serrano peppers , seeded and diced
    1/4 cup minced fresh cilantro
    1/4 cup orange juice
    Juice of 1 lime
    1 TBSP cider vinegar
    2 Garlic cloves minced
    2 tsp ground ancho chili pepper, divided
    1/4 tsp salt
    1/4 tsp sugar
    2 corn tortillas cut into strips

Directions

In a large bowl ,combine Papaya,beans,avacado,corn,raisins,peppers, cilantro, orange juice, lime juice, vinegar, garlic , sugar, salt and 1/2 the ancho.
Cut the tortilla into strips and place on a bakin sheet coated
with cooking spray.Sprinkle with remaining Ancho and bake
at 350 for 8-10 minutes or till crisp sere with salad
