Ingredients

    One large package of three-cheese tortellini from the refrigerated pasta section

    Large bunch of fresh asparagus, trimmed and chopped in 1 inch lengths

    One bunch of fresh basil, chopped

    One package of marinated mozzerella ( I prefer to half the mozzerella balls), marinade reserved

    One small red onion, chopped

    One package of cherry or grape tomatoes, halved

    1/3 cup shredded parmesan cheese (optional - elimination of this reduces both fat and calorie counts)

    Black pepper and salt to taste

Directions

Boil tortellini per package directions, adding asparagus for last 2-3 minutes of cook time. Reserving marinade and half of parmesan cheese, toss all ingredients in large bowl. Continue to toss while adding about a third of a cup of the marinade (more or less according to taste) making sure to get the herbs and spices along with the oil. Add salt and pepper, toss well. Top with remaining parmesan cheese.
