Ingredients

    Super sweet corn, 11 oz,
    canned or frozen
    Extra lean ground beef, 1 lb.
    Stewed tomatoes,1- 14 1/2 oz can
    Brown rice, 1 cup (dry; 1 1/3 cup cooked)
    Zucchini, 1 medium, diced
    Onion, 1/2 cup diced
    2% Sharp Cheddar Cheese, shredded, 1 cup

Directions

Brown ground beef with onions and zucchini; drain. While cooking ground beef, cook rice in separate pan and set aside. Return ground beef mixture to pan and add taco seasoning mix and 3/4 cup water. Stir until mixed well, then add stewed tomatoes and corn. Return to simmer for approx. 5 minutes. Add in cooked rice and stir. Sprinkle each serving with 1/8 cup of cheese and serve. Makes approx. 8- 1 cup servings.
