Introduction

Ingredients

1 Cup pumpkin seeds
1/2 Cup water or to desired consistency
1-2 seeded canned chipotle peppers
2 teaspoons adobo sauce (chipotles are typically canned in adobo sauce)
2 tablespoons olive oil
Juice of one lemon
1/2 teaspoon salt
Directions
Soak pumpkin seeds in warm water for about an hour. You might be able to skip this step if you're in a hurry but I find it helps soften up the seeds and yields a smoother texture.
Add all ingredients to blender. Start with less water if you want a thicker spread and add more to reach a desired consistency. Blend until smooth. The time will vary depending on your blender. Mine takes about 3 minutes.
Makes 2 cups, or 16 2-tablespoon servings.
Variations-add cumin, smoked paprika, fresh cilantro or parsley, or sub lime juice for lemon juice. Or do whatever you want with it. It's pretty versatile.
