Introduction
Low-carb, low-calorie, easy to make chili recipe. 6 net carbs for each of 6 1 1/3 cup servings, not counting any garnishes. Good source of fiber, vitamin C and other nutrients. Garnishes will increase the calorie and carb count. Can increase spice if desired. You could substitue ground turkey or leave out the meat altogether for a vegetarian chili. Ingredients

1 can Muir Glen Fire Roasted Tomatoes
1 cup Muir Glen Fire Roasted Tomatoes with Green Chili
1 medium onion, chopped
2 stalks celery, chopped
1 red sweet bell pepper, chopped (can use any color sweet bell pepper)
1 tbsp olive oil
1 lb ground beef
1.5 cups water, or more or less to get right consistency
1 can Eden Organic Black Soy Beans
Salt and Pepper to taste (optional)
Chili powder to taste (optional)
Cheddar cheese for garnish (optional)
Sour cream for garnish (optional)
Directions
Chop the onion, bell pepper and celery. Soften the onions, peppers and celery in a little olive oil over low heat. Brown the ground beef. Add beef to veggie mixture in a large pan and add canned tomatoes and black soy beans. Add water as needed. Simmer until it tastes good, 30 minutes to 60 minutes. Add salt and pepper and other seasonings to taste ( I didn't add any other seasonings since I am watching my salt intake and the spice was just right for me). Makes approximately 6 1 1/3 cup servings. Garnish with cheddar cheese and/or sour cream if desired.
