Introduction

Great served with rice and apricot preserves. Great served with rice and apricot preserves.

Ingredients

    2 # Chicken breast
    1/2 cup whole milk (you will only use 1/2 of this, but need the entire amt in the bowl)
    1/2 cup shredded coconut
    1/2 cup bread crumbs (you will only use 1/2 of this, but need the entire amt in the bowl)
    1 tbsp garlic powder
    1 tsp salt
    1/2 tsp black pepper
    1/4 tsp cayenne (optional)

Directions

Start with three bowls, one with milk, one with shredded coconut, and the last with bread crumbs and spices.

Heat your oven to 350 and spray cookie sheet.

Take each piece of chicken, dip in milk, coconut and bread crumbs. Bake for 35 minutes (Approximately).

Serve with salad and rice.

    Very Good
    This was sweet, crunchy, and seasoned all in one. It wasn't the best chicken I have had, but it was really good and my kids (who are toddlers) ate everything they were given. Will be making this again. - 6/15/10
