Ingredients

    1 can black beans, rinsed
    1 can Rotel Tomatoes with Lime & Cilantro
    2 cloves garlic, minced
    small amount onion, diced
    1 T olive oil
    2 medium sweet potatoes, cook to almost soft, big chunks
    1 can chicken broth, reduced sodium, fat-free

Directions

saute garlic & onion in olive oil
add rotel and black beans and chicken broth
simmer till heated through
add sweet potato chunks
simmer till heated through
stir to break down parts of sweet potato, this will add thickness to the soup.
