Ingredients

3 Egg whites
1 Whole Egg
11/2 cups non fat milk
1/8 cup sugar
1 tsp Vanilla
3.4 cup cooked brown rice
1/3 cup dates, chopped
Sprinkle of nutmeg.
Directions
Beat the egg, egg whites, sugar and vanilla together to combine, not too vigorously, you odn't need them to become fluffy.
Add the rice, milk and dates to the egg mixture and stir well.
Lightly grease a medium sized baking dish and pour in the rice/egg mixture.
Place the dish in a baking pan and fill the baking pan with boiling water until the water comes at least 2cm up the outside of the dish.
Place the pans in the oven and bake for 45 - 60 mins until browned on top and set in the centre.
Oven temp = 325F
