Introduction

This is my moms recipe I just cut the mayo and used red potatoes w/ the jackets on and it is still superb and makes 20 amazing 1/2 cup servings. This is my moms recipe I just cut the mayo and used red potatoes w/ the jackets on and it is still superb and makes 20 amazing 1/2 cup servings.
Number of Servings: 20

Ingredients

    20 small red potatoes
    5 large eggs
    4 stalks celery
    6 baby sweet Gherkins
    4 green onions (Scallions)
    1 tsp salt or to taste
    1 tsp Black pepper
    1 TBL mustard
    1 3.8 oz sliced black olives(optional)

Directions

wash & trim (if needed) 20 small red potatoes boil w/ eggs until potatoes are fork tender, allow to cool. In a large bowl rough chop potatoes & peeled eggs. Mince (I used my food chopper) onions, celery, sweet pickles. Add remaining ingredients and smash together, I use my manual potato masher to mix well and get a creamy/chunky texture. You could toss if you prefer. Makes 10 cups or 20, 1/2 cup servings. Great for a BBQ or Pot luck.
