Ingredients

    1 can pink salmon-bones picked
    1 medium egg beaten
    salt and pepper to taste
    1/2 cup chopped onion
    1/2 cup chopped bell pepper
    7 saltine crackers crushed
    1/4 cup vegetable oil for cooking
    1/2 cup cornmeal for coating patties

Directions

1.empty salmon from can into bowl and pick out all bones and other material.
2. season with salt and pepper to taste
3. beat egg and add to salmon
4. add chopped onions and bell peppers
5. crush the crackers and add to mixture
6. Mix well and form into 6 patties
7. Coat each side of the patty with cornmeal
8. Cook in oil that has been heated and serve

    Almost just like Mom made them! I just leave off the corn meal and cook them in olive oil. Delicious! and high in protein. - 5/4/13
