This is an easy and tasty slow cooker recipe for those nights when you don't really feel like cooking. We often freeze the leftovers for lunch during the next week. Number of Servings: 6

Ingredients

    1.5 cup half and half cream
    6 Medium potatoes, cut into bite-size chunks
    4 Tbsp Bacon Bits (or fresh cooked, crumbled bacon)
    1 can Chicken Broth
    2 cups diced ham or chicken
    2 cups shredded cheddar cheese
    1 cup grated carrots
    1 tsp garlic powder
    Salt & Pepper to taste

Directions

Add Chicken broth, garlic powder, salt, pepper and potatoes to slow cooker, and cook on medium for 3-4 hours.
Add cream, cheese, bacon, ham & carrots; stir until cheese is melted.
Let cook another 30 minutes on medium, stirring occasionally.
Serve with your favorite dinner roll.

You may substitute ham with chicken, for a little different flavor.
