Ingredients

    1 cup Strawberries, fresh
    1.5 cup Flour
    1 cup Granulated Sugar
    1.5 Tbsp Cinnamon
    .25 tsp Salt
    .5 tsp Baking Soda
    .25 cup Vegetable Oil
    .25 cup Applesauce, unsweetened
    2 large eggs, lightly beaten

Directions

1. Preheat oven to 350 degrees F. Oil and flour a large loaf pan or 2 small pans.
2. Slice Strawberries and place in a medium sized mixing bowl.
3. Combine flour, sugar, cinnamon, salt and soda in a large bowl. Blend eggs, oil and applesauce and stir into flour mixture until the dry ingredients are moistened.
4. Pour batter into loaf pan and bake for 60 minutes (large pan) or 40 minutes (small pan) or until a toothpick is inserted and comes out clean. Let pan cool on wire rack for 10 minutes, then turn out loaves to cool completely.
