Ingredients

    4 Roma tomatoes, quartered
    1/4 cup feta cheese, cut into bite-sized chunks
    1/4 cup mint leaves, sliced into thin strips
    1 tablespoon olive oil
    1 teaspoon kosher or sea salt
    1 teaspoon coarse black pepper

Directions

Place tomatoes, cheese, and mint into salad bowl. In seperate bowl, whisk together oil, salt, and pepper. Pour over salad, gently toss.

Try using a lemon-flavoured olive oil for a little extra punch.
