Introduction

While this Italian dish is not very low in calories made per directions (398 cal. per serving), it was worth eating a bit less earlier in the day to make room! Next time I plan to use lean Italian sausage made with turkey. Ingredients

    Penne pasta
    3 Tbsp extra-virgin olive oil
    2 cloves garlic, minced
    8 oz Italian sausage, peeled and crumbled
    10 artichoke hearts preserved in olive oil, drained and chopped
    handful of fresh flat-leafed parsley, diced
    salt & pepper to taste
    grated Parmesan cheese (optional & not included in calorie count)

Directions

Cook pasta according to directions, strain. While pasta is cooking, heat olive oil in large pan, add garlic and sausage. Cook until sausage is nicely browned and cooked through. Add artichoke hearts, salt & pepper, and parsley. Cook an additional 2-3 minutes, and remove from heat. Pour into pasta and stir. Serve with grated Parmesan cheese.
