    1 C Fiber One Cereal Ground
    3/4 C 99% Fat Free Milk
    1/4 C Sunflower Seeds
    1/2 C Flax Seeds Ground or Flax Seed Meal
    1/4 C Splenda Brown Sugar Blend
    1/2 C Splenda Sugar Substitute
    1/4 C Flake Coconut
    1/2 C Applesauce Unsweetened
    1/2 C Egg Substitute
    1/2 C Shredded Carrot
    3/4 C Chopped Apple or 1/2 C Blueberries
    1 C White Flour
    1 T Canola Oil
    1 tsp Vanilla
    2 tsp Ground Cinnamon
    1/2 tsp Salt
    3 tsp Baking Powder
    3 T Absolutely Pure Whey (heaping)


Place the ground Fiber One in a large bowl and add the milk. Allow to stand about 5 minutes or until the milk is absorbed.

Add the rest of the ingredients and mix well. It will be thick.

Spray 12 muffin pan with non-stick spray. Place batter evenly into the pan and bake at 375 degrees for 20 - 25 minutes or until toothpick inserted into middle of muffin comes out clean.
