Introduction

My version of tamale pie. My version of tamale pie.
Number of Servings: 12

Ingredients

    1 lb lean ground beef
    1 can Bush's Reduced Sodium Black Beans
    1 Can Corn
    1 can Hunt's Petite Diced Tomatoes
    1/4 med Onion
    3 cloves Garlic
    1 tbs Mexican Chili
    1/2 tbs Cumin
    2 tsp Black Pepper
    2 boxes Jiffy Corn Muffin Mix
    2 eggs
    2/3 c milk

Directions

Slice the onion into thin strips - set aside
Clean and mince garlic - set aside
Open corn and beans and drain off liquid
Brown ground beef and onion in a large skillet. When almost all brown, add minced garlic and cook until beef is done. Sprinkle 1 tbs flour onto ground beef and stir and cook for about 3 minutes. Add corn, beans, tomatoes, Mexican chili, cumin and black pepper and mix well. Cook mixture, stirring occasionally, for another 5 minutes.

Add mixture to Pam sprayed 13 x 9 casserole dish. Smooth mixture evenly.

Prepare Jiffy mix according to package. Spread evenly onto hamburger mixture all the way to the edges.

Bake in a 400 F oven for 25 - 30 minutes or until top is golden brown.
