Ingredients

1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
1 tablespoon grated orange peel
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup nuts (your choice, I used toasted pecans).

1 tablespoon grated orange peel
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup nuts (your choice, I used toasted pecans).
Heat oven to 375˚F. Mix sugar pumpkin,shortening and orange peel. Stir in flour, baking powder, baking soda, cinnamon and nuts. Drop by spoonfuls onto an UNgreased baking sheet. Bake 8-10 minutes. Immediately remove and cool.
Makes three and a half to four dozen cookies, depending on the size.
********Optional: top with "Light Brown Glaze" (calories not figured in this SP recipe...) I like the cookies better plain, personally...

1 teaspoon vanilla
1-2 tablespoons milk
Heat butter in a saucepan over medium heat until delicate brown. Stir in sugar and vanilla. Stir in milk until smooth.
