Number of Servings: 6

Ingredients

    1 lb whole wheat penne
    2 med. red onions, thinly sliced
    2 lg garlic cloves, minced
    1 tea evoo
    5 carrots, cut julienne
    2 cups raw broccoli
    15 oz can diced tom or 12 ripe plum
    3 tablespoons Worcestershire sauce
    4 tablesppons fresh basil chopped
    1 15 oz can red kidney beans
    1 15 oz can white kidney beans
    1/2 cup parmesan cheese

Directions

Cook pasta. Saute onions & garlic til tender. Add veggies, worcestershire sauce and basil. Simmer 4 min. Add beans & simmer a few min or until veggies are tender. Add pasta & chesse. Toss and serve. Serves 6.

    It's really good - even my kids loved it. Just the quantity is enough for two meal for a family of four. I've put half of it in the freezer for the next pasta day. - 5/31/10

    I will definitely be making this again! I also saw it in Runner's World and think that it is a wonderful vegetarian healthy option. - 5/25/10
