Ingredients

    2 Mangoes, finely diced
    2 Cucumber, finely diced
    1 Red Onion, finely diced
    1 Jalapeno pepper, finely diced
    Cilantro, chopped
    Juice of 2 limes

Directions

Mix all ingredients. Refrigerate. Very good with fish, chicken or on rice.

    I make one very similar to this - if you want to add a red bell pepper and a cup of corn - it is really colorful! and tastes oh, so good as I'm sure this one does! - 9/17/10
