Introduction

You can use any fruit in this recipe, canned, fresh or frozen. If using fresh or frozen, add sweetening as needed to the juice/water combination. DO NOT STIR the layers. Ingredients

    1/2 cup melted butter
    1 cup self rising flour*
    1/4 cup sugar
    3/4 cup milk (calculated with 2%)
    2 cups canned peaches (extra light), drained and cut up (reserve juice)

Directions

Preheat oven to 350 degrees. Mix first four ingredients in a bowl. Pour into greased 8" pan. Spread fruit over top of batter. Combine reserved juice with enough water to make 1 cup. Heat just to boiling (microwave works well). Pour mixture over fruit. DO NOT STIR ANYTHING! Bake about 30 minutes, until golden brown. Really special served warm with vanilla ice cream.
*If you do not have self-rising flour on hand, measure 1/2 tsp salt, 1/2 tsp baking soda and 1 tsp baking soda. Place in the bottom of a one-cup measure. Add flour to equal one cup.
