Ingredients

3/4 cup chopped strawberries
2 tbsp agave nectar
3/4 cup whole wheat flour
1/4 tsp salt
1/4 tsp baking soda
1 banana, mashed
1 egg
2 tbsp applesauce
1/2 tsp vanilla
(optional glaze)
1 strawberry, finely chopped
1 tbsp lime juice
1/2 cup powdered sugar
Directions
Preheat oven to 350 and line 6 cups of a muffin tin with paper liners. Spray the liners with Pam or oil to keep the muffins from sticking to the papers (very important for this recipe!)
Combine the agave nectar and strawberries in a small bowl and let sit.
In another small bowl, combine the flour, salt, and baking soda and whisk. Set aside.
In a separate bowl, combine the banana, egg, vanilla, and applesauce. Add in dry ingredients and mix until just combined. Fold in the strawberries.
Fill the 6 muffin cups until full as the muffins will not rise too much. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
Then, if you would like, prepare the glaze. Mix the lime juice, strawberry, and powdered sugar in a small bowl and top the muffins.
