Introduction

Number of Servings: 4

Ingredients

    12 skinless chicken breast tneders
    juice of 1 lime
    5 tbsp flour
    1 tbsp Cajun seasoning
    1 tsp cayenne pepper
    1/2 tsp salt
    For the salad
    2 oranges
    spinach and arugula greens
    1 tbsp olive oil
    1 small red onion, thinly sliced

Directions

Heat oven to 425F/220C.
Toss chicken in lime juice to coat.
Place flour, Cajun seasoning, cayenne pepper and salt into a large bowl and mix well.
Sprinkle flour mixture onto a plate.
Lift chicken pieces out of the lime juice and press each side into the seasoned flour to coat evenly.
Place chicken on a wire rack and sit the rack on a baking sheet.
Bake chicken for 20-25 mins.
Peel oranges, discarding white pith & cut into segments over a bowl to catch juices.
Toss orange segments with the orange juice, salad greens, oil and onion and divide between 4 plates.
Pile crispy Cajun chicken on top and serve.
