Ingredients

For Rub:
Paprika 1/2 tsp
Cayenne Pepper 1/2 tsp
Garlic powder, 1/4 tsp
Pepper, black, 1/4 tsp
Thyme, ground, .125 tsp (1/8 tsp)
Oregano, ground, .125 tsp (1/8 tsp)
Salt, .125 tsp (1/8 tsp)
Smart Balance Heart Right Light Buttery Spread, 1/2 tbsp
The Goodies:
Tilapia, 8 oz (1/2 lb)
Brown Rice, medium grain, 1 cup (I use boil in a bag)
Broccoli, 1 cup, chopped
For Relish:
Jalapeno Peppers, 1 pepper
Onions, raw, 1-2 tbsp chopped
Red Ripe Tomatoes, 1/2 medium whole (2-3/5" dia)
Cilantro 1/4 cup
Directions
Boil water in two pans, one for steaming, one for rice.
Mix rub ingredients together. Spread about 1 tbsp on each half of tilapia (1/4 lb each) then rub spice mix onto each.
Place tilapia and broccoli in steamer, steam about 20 minutes until tender. In second pan, boil rice for 10 minutes or as directed on box.
While other stuff is cooking, chop jalapenos, onions, and cilantro into a nice paste. Chop tomato and stir in with paste.
Layer rice, then broccoli and tilapia, and top w/ relish. Watch out this has some serious heat to it. Enjoy!
