Ingredients

    Bag of Seafood Medley ( or use mix of clams, shrimp, calamari, and mussles
    One large onion chopped
    One clove garlic chopped
    One can of minced tomatoes, flavored with basil
    One sausage link..I used chicken sausage
    Three small red potatoes..can use white
    One bulb of fresh fennel cut up and roasted
    One bag frozen mixed veggies..I used one with Italian veggies

Directions

Makes about four servings/ cup and a half..or six servings one cup each.

Very low fat cooked my way:
Place frozen bag of seafood medley in large cooking container. Throw in whole can of tomatoes, the garlic, onion, and the roasted fennel, plus cut up sausage. My sausage is precooked and low fat..if you use uncooked sausage..cook alone first to remove extra fats.
You can saute the onion and garlic first in olive oil for more flavor, but I opted to go as fat free as I could. Add the veggies frozen.
Cut up potatoes and cook alone in water..and add when soft. They can be cooking as you are also cooking the seafood. Save cooking time.
This was delicious and very different.
