Ingredients

    Egg, fresh, 2 jumbo
    Egg white, 2 serving
    Spinach, frozen, 0.7 cup
    Mozzarella Cheese, part skim milk, 2 oz
    Green Chili Peppers, canned, (Trader Joes) .25 cup
    Banana Peppers, 1 small (4" long) chopped
    1 mini avocado( halved and sliced)

Directions

Spray pan with cooking spray. In small pan, saute frozen spinach until unfrozen and warm. Add all peppers and cook for 1-2 minutes. Add salt and pepper to taste. Then add 2 fresh eggs and 6 tablespoons of egg whites, and mix them together. Stir occasionally until eggs are cooked. Flatten mixture evenly and top with mozzarella cheese. Let cheese melt partially, then fold one half of the mixture over the other (to form an omelette). Cut in half and serve. Top each portion with half a small avocado.
