Introduction

This is just the basic egg pasta that you can use when making spaghetti noodles, fettucini noodles or even lasagna noodles).

NOTE: You will need to have some type of pasta sheet roller and pasta cutter to complete this recipe

Ingredients

    2 large eggs
    1/2 Tbsp water
    1-3/4 cups sifted unbleached all-purpose flour (white & ultragrain mix)
    1/4 tsp salt

Directions

1. Put eggs, water, flour and salt in a mixer bowl. Mix together with wooden spoon or hard plastic spoon. Once mixture starts to turn into dough, you can either use your mixer if you have a kneading hook or you can knead the dough by hand. Knead for 3 minutes.

2. Let dough rest for 20 minutes.

3. Spread flour out on cutting board or counter top and use roll it out flat (so that it will go through a pasta roller).

4. After rolling out flat, cut into long pieces with the width at least 1 inch less than the width of your pasta roller (as dough will spread out and may not make through the roller as it is flattened even more).

5. After running dough through roller, you will then need to run it through the pasta cutter.

6. Place in pan of boiling water and boil for approximately 7 to 9 minutes.

NOTE: If you have trouble running dough through the roller or the cutter, you may need to spread some flour over the dough and shake it off before running through the roller or the cutter. You may also need to pull pieces apart before putting in boiling water if pasta is not cut completely through.
